  When the Freedom Bird brought me back to Travis AFB after my year in &lt;br&gt; &#39;Nam they took us to a mess hall where we were served enormous cooked- &lt;br&gt; to-order porterhouse steaks, baked potatoes, fresh vegs, tossed salad, &lt;br&gt; and a choice of desserts. All of very high quality. I seriously &lt;br&gt; doubt that Applebee&#39;s has anything as good as that was.

I also learned &lt;br&gt; to brown roux by toasting flour in skillet, but later did cajun/creole &lt;br&gt; style rouxs by heating flour/fat together. Not sure diff in flavor. &lt;br&gt; I suspect the flour/fat combo approach would be more flavorful, flavor &lt;br&gt; being more seeped into the oil over longer period of time. What say
